Tabby is a long-lasting and durable form of concrete composed of the lime from burned oyster shells and mixed with sand, water, ash, and other shells. Some of our oldest surviving structures in the Southeast, constructed by Spanish and English settlers in the 1600s, are still standing because they were made with tabby concrete.
